Abstract The chemical structure of oligosaccharides produced by Zymomonas mobilis levansucrase (EC 2.4.1.10) was determined using enzymatic hydrolysis, mass spectroscopy, and 13C-NMR spectroscopy. The major oligosaccharide (98% of total oligomers) produced from transfructosylation reactions with -sucrose was identified as 1-kestose (O-α-D-glucopyranosyl-(1→2)-O-β-D-fructofuranosyl-(1→2)-β-D-fructofuranoside).
