Abstract A model substrate consisting of cassava starch embedded in kappa-carrageenan was used to mimic the growth of Rhizopusoligosporus on cassava tubers. Growth on the model substrate was similar to that during solid-state fermentation of the actual cassava. However, protein production and starch utilization were slower on the model substrate.
