Formatted abstract
This project set out to refine experimented techniques in the separation of crystals from candied honey so studies on the growth rate of crystals could be determined in the future. In particular the project focussed on the liquid / crystal separation using a temperature controlled centrifuge to eliminate the dissolving of crystals. Certain variables were trialed and after extensive trials optimum operating conditions were achieved and are as follows:

·  Centrifuge temperature of 16°C.
·  Centrifuge time of 20 minutes.
·  Centrifuge speed of 20000 times gravity.
·  Cotton filter medium with apertures approximately 100mm.
·  Filter medium lifespan of two runs.

The requirement of such a high centrifugal force can be attributed to the crystalline structure of glucose monohydrate. It is argued that the flat plates effectively plug the filter apertures and prevent the successful separation of liquid honey and the crystals formed.

In the past an attempt by Rufford (2000) was made to measure the equilibrium concentration of crystallised honey using a glucose / water ratio. Results were unsuccessful and could be a result of separation techniques used. The development of this separation technique will allow a better study of equilibrium concentrations to occur without the hindrance of separation difficulties.

While this is only the beginning to a honey growth experiment, this achievement of successfully filtering liquid honey from crystals should pave the way for the development of the rate of growth of crystallisation of honey in the near future. Appendices C and D provide a literature survey and methodology for ‘The Crystallisation of an Australian honey’.
