Nine European samples of DDGS were characterized according to chemical, microbiological, sensorial (including visual and olfactory) and chromatographic analysis. The DDGS samples were classified in three groups based on olfactory profile and chromatic measures: dark, medium and light. The dark group came from only wheat while all the samples in the light group originated solely from corn and had a higher crude fat content than the other groups. Differences in chromatographic profiles were related to chromatic values and olfactory profile in the three groups. The light group was characterized by relative high levels of diacetyl, isoamyl alcohol and γ‐Butyrolactone identified with yeasty and bakery notes. The medium group showed high total pyrazines relative to the other groups that correlate with nutty and toasted notes. The dark group resulted in a uniquely high level of furfural compared to the other groups typical of smoky and burnt notes. Similarly, the chromatographic profile allowed the identification of the cereal source. It is concluded that the chromatographic profiles of DDGS are related to the sensorial aspects and the cereal source.

Les drêches de céréales (DDGS) sont devenues largement disponibles et peuvent présenter un intérêt économique dans les formules, mais leur palatabilité particulièrement pour porcelets est une préoccupation. Des essais récents ont montré comment des drêches foncées présentant des notes de grillé, fumé, beurré, engendraient des refus moindres chez le porcelet, comparé aux drêches claires (Roura et al., 2010). L’objectif de ce travail est de caractériser neuf d’échantillons de drêches.
